特种水生蔬菜刺苦草根状茎采后生理特性的研究

摘    要:以刺苦草(Vallisneriasp inulosa)根状茎为试验材料,研究其在水温8~10℃条件下贮藏过程中的生理生化特性,为延长其保鲜及其生产开发提供理论依据。结果表明:随着贮藏时间的延长,其水分、淀粉含量不断下降;还原糖含量、褐变度逐渐上升;呼吸强度、过氧化物酶活性和总酚含量均先上升后下降;而可溶性蛋白质含量、PPO活性以及CAT活性的变化趋势均呈现先下降后上升的趋势。

Abstract:Biochemistry and physiology of Vallisneriasp inulosa root was investigated when the temperature of the water was between eight and ten centigrade, and this will be useful for the storage and production of Vallisneriasp inulosa root. The results showed that as the time of storage goes on,the contents of water and amylum were decreased gradually, the content of reducing sugar and the degree of enzymatic browning were both increased gradually, respiratory intensity、Peroxidase activity and phenols content were showed increased and then decreased;soluble protein content、Polyphenol oxidase activity and Catalase activity were showed decreased and then increased.
