海藻酸钠涂膜对苹果果实活性氧代谢的影响

摘    要:海藻酸钠涂膜对红富士苹果有显著的保鲜效果,涂膜减少果实中活性氧生成,降低膜脂过化程度,保持细膜的完整性,并使果实保持较低的保护酶活性。初步认为海藻酸钠涂膜可通过降低活性氧化谢而起保鲜作用。

Abstract:Fresh preserve effects of coating with sodium alginate on apple were significant.Apple with coating had less level of active oxygen than control,and also had lower activities of defensive enzymes such as SOD and CAT.Coa ting not only decreased the intensity of membrane lipid peroxidation,but also maintained the membrane integrity of apple to some extent.The results suggests that coating had the preserve effectiveness by decreasing the metabolism of active oxygen of apple.
