Abstract:Field experiments were performed to study the different contents of 2-acetyl-1-pyrroline in 11 aromatic rice varieties grown in the same place and same time with the same cultivation conditions and their distribution characteristics in seeds. The results showed that 5 aromatic rice varieties (Guixiangsinuo, Zhongjian 2, Qingxiangmi, Taiguoxiangdao 1 R207 and Texmati) contained 2-acetyl-1-pyrroline, and 2-acetyl-1-pyrroline concentrations in milled rice and bran in those 5 varieties varied significantly (P<0.05). The highest level was found in Texmati with 0.6765mg/kg in milled rice and 0.1738mg/kg in bran, whereas the lowest level in Guixiangsinuo with 0.0452mg/kg in milled rice and 0.0173mg/kg in bran. The 2-acetyl-1-pyrroline was distributed mostly in the milled rice part(more than 90% of total content in rice grain), and only 10% in the bran and no any 2-acetyl-1-pyrroline was found in chaff.
