摘    要:[目的]为菊苣菊粉脱色寻求一种最佳脱色工艺。[方法]用活性炭对菊苣菊粉液进行脱色试验,通过单因素及正交试验确定最佳脱色条件。以葡萄糖为标准品,采用蒽酮比色法测定总糖,采用3,5-二硝基水杨酸(DNS)法测定还原糖。[结果]活性炭脱色的影响因素依次为:脱色时间>脱色温度>活性炭用量。提取液中有色物质的最大吸收波长为550 nm,在此波长下,通过正交试验确定了脱色的最佳工艺条件,即温度为60℃、活性炭用量为20 g/L、时间为40 min。在此工艺条件下,测得的菊粉平均含量及平均脱色率分别为21.287 8mg/ml和60.098%,相对标准偏差为0.139 8%。[结论]采用活性炭法脱色菊粉提取液的效果较好。

Abstract:[Objective]The study aimed to seek for an optimum technology for decoloring chicory inulin.[Method]The decoloration experiment was conducted on chicory inulin solution by active carbon and the optimum decoloration condition was confirmed through single factor and orthogonal experiments.With glucose as standard,the total sugar was determined by anthrone colorimetry and the reducing sugar was determined by 3,5-dinitro-salicylic acid(DNS) method.[Result]The factors influencing decoloration by active carbon in order were decoloration time>decoloration temperature>active carbon dosage.The maximum absorption wavelength of coloured matters in extracts was 550 nm,under which the optimum technological condition was confirmed through orthogonal experiment,i.e.temperature of 60 ℃,active carbon dosage of 20 g/L and time of 40 min.Under this technological condition,the determined average content and average decoloration rate of inulin were 21.287 8 mg/ml and 60.098% resp.,with relative standard deviation of 0.139 8%.[Conclusion]The effect of decoloring inulin extracts by active carbon method was better.
