摘 要: | 对饲养到13周龄的豁鹅、莲花白鹅,北京鸭和大余麻鸭的胴体品质进行了测定和相关分析,并结合保存、利用这些水禽品种资源进行了有关讨论。

A Comparative Study on the Carcass Quality of Different Water Birds |

Abstract: | The present paper reports the results of an experiment conducted to study the carcass quality of He goose, Lian-hua white goose, Peking duck, and Dayu sheldrake, All geese and ducks tested were reared under same conditions, and slaughtered at the age of 13 weeks. The results appeared to be:i) Eviscerated weight percentage of the dressed weight averaged 72.81, 72.15, 73.68, and 73.17 for He goose, Lianhua white goose, Peking duck, and Dayu sheldrake, respectively, breast and thigh muscle percentage of the eviscerated weight 40.68, 41.25, 34,82 and 33,13, respectively. Besides, they displayed a good skin-caing productivity. The skin areas of the four water birds were 1413.97cm2, 1431.15cm2, 1066,?cm2, and 879.59cm2, respectively.ii) Breast musclcs'pH values of He goosc.Lianhua white goose, Peking duck, and Dayu sheldrake were 6.26, 6,26, 6.14, and 6.03, respectively; shear value 3.73kg, 4.61kg, 2.95kg,and 3.06kg, dripping loss rate 3.83%, 3.870/ , 2.67%, and 2.88%; and cooking rate 64.06%, 64.50%, 63.76%, and 63.96%. corrcspontl.ng values for thigh muscles were 6.61, 6.45, 6,34, and 6.35 (pH); 2.74kg, 3.47kg, 1.89kg, and 2.01kg(shcar value); 3.49%, 3.45%, 2.61%,and 2.82%(dripping loss rate); 67.18%, 67.78%, 66.16%, and 66.39%, cooking rate respectively.In the end, phcnotypic correlation analysis between live weight and other characters was done. |
