红四氮唑在食品菌落总数测定中的应用研究

摘    要:以1份普通的熟咸蛋样品作为食品检验样品进行常规的菌落总数测定,采用2种不同的培养基进行检验判定其计数优劣。试验结果表明,检验中采用加入1%红四氮唑无菌水溶液的平板计数琼脂培养基检测菌落总数具有易于观察计数、结果准确可靠的突出优势,为食品卫生微生物学检验工作及相关标准的制定和修改提供了一定的参考价值。

The Application and Research of Red Tetrazoline on the Determination of Food Aerobic Plate Count

Abstract:As an ordinary food sample,a cooked salted egg sample was used to determine the aerobic plate count in this research.Two different kinds of medium were used as the comparison.The result showed that the plate count agar added 1% red tetrazoline sterile solution was the better method which was easily for number observation and which had the accurate and reliable result.This research offered some references for the food microbiology determine work and the estabishment and amendment of related standard.
