摘    要:应用气相色谱法分析测定橄榄油的脂肪酸组成,揭示橄榄油脂肪酸特征,并研究其掺入菜籽油、花生油、大豆油或精炼橄榄油时脂肪酸的变化规律,为橄榄油的掺伪鉴别提供参考依据。

Abstract:Gas chromatography had been used to analyse and determine the composition and amount of fatty acids in olive oil to find out characteristic fatty acids of pure olive oil and then got study the variations rules in the composition and amount of fatty acids in samples of olive oil adulterated with either rapeseed oil, soya bean oil.maize oil or refined olive oil which can provide basis for identifing real samples.
