亚油酸异构酶作用玉米油脂生产共轭亚油酸条件研究

摘    要:玉米油脂中含有丰富的不饱和脂肪酸,其中主要为亚油酸和油酸。亚油酸可以经过亚油酸异构酶作用转变为功能性物质-共轭亚油酸(Conjugated Linoleic Acid,CLA)。共轭亚油酸具有抗癌、减肥、调节免疫等许多生理功能。文章主要研究亚油酸异构酶作用玉米油脂生产共轭亚油酸的条件,提高共轭亚油酸的生成量。通过试验确定其最适条件为:玉米油乳浊液浓度2%,40℃条件下反应,酶与其作用比例1:5,反应时间150min。CLA产量较高,达25.7μg·mL-1。

Abstract:The corn fat includes the rich unsaturated fatty acid which is mainly linoleic acid and oleic acid. The linoleic acid may be transformed into the function matter-conjugated linoleic acid(CLA) by linoleic acid iso- merase action. There are a lot of physiological functions in corn fat, such as anti-cancer, loses weight, adjustment immunity, and so on.
