摘 要: | [目的]研究苹果渣中果胶的提取工艺。[方法]通过酸水解乙醇沉淀法从苹果渣中提取苹果果胶,设计4因素3水平正交试验研究料水比、pH值、提取时间和温度等因素对果胶得率的影响,对酸解法提取苹果渣中果胶的最佳提取工艺进行优化,确定最佳的提取条件。[结果]结果表明,水解体系的料液比对果胶得率影响最大,其次是pH值、提取时间,最后是提取温度。最佳水解条件为:水解温度90℃,水解体系pH值2.0,水解时间90min,料液比1:12,果胶产率可达到9.25%。[结论]该研究结果为苹果渣的高效利用提供参考。

Abstract: | [Objective] The purpose of this research was to study the extraction process of pectin from apple residue.[Method]The pectin was extracted by hot acid solution from apple residue.Solution pH value, extracted time, extracted temperature and the ratio of solution to material were studied to determine effect on extracted rate of pectin.The optional extracted conditions were obtained by the way of orthogonal experiment.[Result] The results indicated that the ratio of solution to material had the greatest influence on extraction.The optimum extracting conditions were as follows: temperature 90 ℃,pH value 2.0 and extracted time 90 min, ratio of solution to material 1∶ 12.Its obtaining rate could reach 9.25%.[Conclusion] This research will provide the scientific references fot utilizing efficiently apple residue. |
