江西余干黑羽乌鸡肉用性能初步研究

摘    要:余干黑羽乌鸡是我国优良地方品种,具有黑羽、乌皮、乌肉、乌骨的“全乌”特征,属珍稀的地方品种资源。为进一步研究余干黑羽乌鸡的种质特性,我们采用随机抽样的方法对产蛋期末的余干黑羽乌鸡进行了肉用性能和肉质测定的研究,并与我国著名的乌鸡品种─—泰和鸡比较。结果表明:余干黑羽乌鸡肉用性能良好,骨骼结构和载肉量比泰和鸡要好。余干黑羽乌鸡的屠宰率达92%,半净膛率为85%,全净膛率为65%,且营养丰富,蛋白质含量高,富含多种维生素和有益人体的无机元素,氨基酸种类齐全,含量较泰和鸡高,特别是胆固醇含量非常低,低于泰和鸡的213%。为进一步开发利用余干黑羽乌鸡营养滋补和药用价值提供科学依据。

Study on Meat Performance of Yugan Blackfeather-blackbone Chicken
Abstract:Yugan blackfeather-blackbone chicken,with the characteristic of black feather,black skin, black meat and black bone,is a local breed,It was studied on meat performance and meatquality by the method of random sampling in laying ended peried,comparativery studied. The meatperformance and meat quality of Yugan blackfeather-blackbone chicken was Taihe silky chicken,the famous blackbone chicken in China,The results showed that the meat performance of Yuganbhckfeather-blackbone chicken was fine,The they construction and meat yield of Yuganblackfeather-blackbone chicken was better than Taihe silky chicken, The dressing percentage, thepercentage of eviscerated yield with giblet and the percentage of eviscerated yield of Yuganblackfeather-blackbone chicken was 92%, 85%and 65%respectively, The meat quality of Yusanblackfeather-blackbone ckicken was good,with plenty of nutrient,e. g. the content of protein washigh, the content of vitamin and mineral was plenty,its content of amino acid was higher than Taihesilky chicken s meat.Specially the content of cholesterol of Yugan blackfeather-blackbone chicken smeat was very low, with 213% lower than Taihe silky chicken meat;So the development of Yuganblackfeather-blackbone chicken is very promising.
