重庆市豆芽生产现状、问题及对策

摘    要:豆芽是补充春、秋淡季供给的重要蔬菜种类。目前,重庆市豆芽月均产量1101 t,且以黄豆芽和绿豆芽生产为主,但因管理不够规范,80%的生产主体在生产过程中都不同程度地添加了生长调节剂、消毒剂等,对豆芽的安全生产造成了不良影响。通过在全市开展调查,摸清了重庆市豆芽生产的基本情况,指出发展中存在的问题,并提出发展建议。

Abstract:Bean sprouts are important vegetables supplied in spring and autumn. At present, the average monthly yield is 1 101 t in Chongqing, and the main products are soybean sprouts and mung bean sprouts. But because of non-standard management, growth regulators, disinfectants are universally added in the production process of bean sprouts, which seriously affected the safety production of bean sprouts. In the paper, we investigated and analyzed the basic situation of bean sprouts production in Chongqing, and pointed out the existing problems in bean sprouts production in Chongqing, then gave relative suggestions on perfecting supervision mechanism, carrying out the training of safety production and strengthening supervision and enforcement.
