白簕体外清除亚硝酸盐及阻断亚硝胺合成的研究

摘    要:[目的]为开发白簕保健食品提供科学依据。[方法]用盐酸萘乙二胺法测定不同量的白簕提取液对亚硝酸钠的清除率,用α-萘胺法测定不同量的白簕提取液对亚硝胺合成的阻断率,并与VC的作用效果作比较。[结果]随着白簕提取液用量的增加,对亚硝酸钠的清除率越来越大,当加到4.0ml后,清除率趋于平衡,即白簕对亚硝酸钠的清除率最大可达55.16%,经对比,4.0ml4%的白簕对亚硝酸钠的清除作用相当于0.4mg的VC;同样的随着白簕提取液用量的增加,对亚硝酸钠的阻断率越来越大,当加到7.0ml后,阻断率趋于平衡,即白簕对亚硝酸钠的阻断率最大可达33.15%,经对比,7.0ml10%的白簕对亚硝酸钠阻断作用相当于2.0mg的VC。[结论]白簕具有一定的清除亚硝酸盐和阻断亚硝胺的能力。

Research on the Nitrite Removal of White ilicifolius in vitro and the Synthesis-blocking of Nitrosamine

Abstract:[Objective] The scientific basis of the development of the health food of white ilicifolius was provided. [Method] The removal rate of nitrite sodium with the different amounts of white ilicifolius extractives was tested the method of hydrochloric acid naphthalene ethylenediamine and the blocking rate of the synthesis of nitrosamine with the different amounts of white ilicifolius extractives was determined with the method of α-naphthylamine in comparison of its effect with the action of VC. [Results] With the dosage-increasing of white ilicifolius extractive, the clearance rate of sodium nitrite was growing more and more, and when it was added up to 4.0 ml, the clearance rate tended to be stable, which was that the maximum clearance rate of sodium nitrite with white ilicifolius was up to 55.16%. Compared with the removal rate between two methods, the role of 4.0 ml 4% white ilicifolius was equivalent to 0.4 mg V_C. And also, With the dosage-increasing of white ilicifolius extractive, the blocking rate of it to synthesis of sodium nitrite was larger and larger, when it was added up to 7.0 ml, the blocking rate tended to be balance, which was that the peak blocking rate of white ilicifolius to sodium nitrite was up to 33.15%. Compared with blocking rate between two methods, the breaking efficiency of 7.0 ml 10% white ilicifolius to sodium nitrite was equivalent to 2.0 mg V_C. [Conclusion] The white ilicifolius had some ability in cleaning nitrite and nitrosamines blocking.
