| 摘 要： | 本研究对中国水牛奶的物理性质、化学成分作了较为系统的测定和分析，同时对中国水牛奶，摩拉水牛奶和中国荷斯坦牛奶的理化性状作了对比。结果表明：中国水牛奶的总干物质，脂肪，蛋白质含量显著高于摩拉水牛奶和荷斯坦牛奶；中国水牛奶水分含量比荷斯坦奶低，非脂固形物和钙的含量较荷斯坦牛奶高，其它成分含量和物理性状无显著差异。

| Abstract: | The physical properties and chemical composition of Chinese buffalo milk were determined,and the physicochemical properties of milk from the Chinese buffalo,Murrah buffalo,and dairy cattle were compared and analysed in this study.Theresults showed that total solid,fat and protein contents of Chinese buffalo milkwere considerablely higher than those of Murrah buffalo and dairy cattle milk;non-fat solid and calcium contents of Chinese buffalo milk were higher thanthose of cattle milk,but the water content was lower.Therewere no significantdifference in other chemical composition and physicai properties among thethree kinds of milk. |
