羽衣甘蓝中叶黄素的分布及稳定性研究

摘    要:为有效的开发羽衣甘蓝中的叶黄素,试验研究了羽衣甘蓝不同部位的叶黄素含量,考察了光、热、pH、金属离子、氧化剂和还原剂对羽衣甘蓝中叶黄素的稳定性影响。结果表明,中等叶片叶黄素含量最高位,为129.4mg·kg~(-1),其次是完全叶,老叶和幼叶中含量较低,茎秆含量最低,仅为7.4mg·kg~(-1)。羽衣甘蓝叶黄素的稳定性随温度的升高而降低,随pH的增加而升高,在pH 10~12时稳定性较高。光照、金属离子、过氧化氢和维生素C引起叶黄素含量下降,其中Fe~(3+)和Cu~(2+)比Na~+和Zn~(2+)引起的下降幅度大,阳光比日光灯引起的下降幅度大。

Abstract:In order to develop the lutein of ornamental cabbage,the content of lutein in different part was studied in this paper. What's more,the influence of light,heat,pH,metal ion,oxidizing and reducing agent on lutein stability of ornamental cabbage was investigated.The results showed that the lutein content of middle size leaves containing 129.4 mg·kg~(-1) was the highest in all kinds of leaves.The next was complete leaves,and the young leaves or old leaves was lower.While the caulis pole,which was only 7.4 mg·kg~(-1),was lowest in all kinds of leaves.The lutein stability of ornamental cabbage degraded with the ascent of temperature,and enhanced with the increase of pH.The lutein was more stable in pH range of 10~12.Shining,metal ion,H_2O_2 and vitamin C gave rise to lutein fallen.Fe~(3+) or Cu~(2+),compared to Na~+ or Zn~(3+),aroused of descending range greatly,sunlight than fluorescent lamp aroused of descending range more greatly.
