摘    要:以芽豆主产区的55份大豆品种为试材,模拟工厂化豆芽生产工艺条件,采用人工气候箱培养技术,系统研究了大豆籽粒大小差异对豆芽营养品质的影响.结果表明,大豆百粒质量与百芽可溶性糖含量呈显著正相关(P<0.01);与大豆粗蛋白含量和粗脂肪含量呈极显著负相关.与中小粒、中粒、中大粒大豆品种相比,小粒大豆品种可溶性糖含量显著偏低(...
