蚂蚁猕猴桃汁饮料的制备

摘    要:目的]研究蚂蚁猕猴桃汁饮料制备的最佳浸提条件和合理的生产工艺。方法]以蚂蚁、猕猴桃为主要原料,制备饮料。经加热浸提制备营养液,然后按一定比例进行混合。结果]确立了产品最佳浸提条件:最佳浸提温度75~95℃,蚂蚁、猕猴桃最佳提取时间分别为6和3 h,最佳比例为猕猴桃原汁为12%~14%、蔗糖8%~10%、柠檬酸0.1%、蚂蚁用量12%、杀菌温度121℃。结论]蚂蚁和猕猴桃可以制备成动植物药食兼用型复合饮料。

Abstract:Objective] This paper aims to study the optimum extraction conditions and a reasonable production process for the preparation of kiwifruit juice of ants.Method] Ant and Kiwi are used as the main raw material for the preparation of beverages.The heated nutrient extraction is mixed according to certain proportion.Result] The optimum extraction conditions of products are established.75-95 ℃are the best extraction temperature and the optimum extraction time of ant and kiwifruit was 6 h and 3 h.The best ratio of the original kiwifruit juice are 12%-14%,8%-10% sucrose,citric acid 0.1%,ant amount of 12%,sterilization temperature of 121 ℃.Conclusion] Ant and kiwifruit could be preserved as composite beverage of medicine and food for animals and plants.
