南果梨采收前与褐变有关的生理生化指标的变化

摘    要:研究了南果梨在采收前生长期间与褐变有关的生理生化指标的变化,分析了采收期对南果梨贮藏期间组织褐变发生的影响。结果表明南果梨果实生长期间酚类物质含量逐渐下降,多酚氧化酶(PPO)活性呈先升后降趋势,超氧化物歧化酶(SOD)和过氧化氢酶(CAT)的活性逐步升高。因此认为,适宜推迟采收期可降低果实中酚类物质含量,完善果实自身的防御系统,可有效地抑制贮藏期间酶促褐变的发生。

Abstract:It was devoted to studying the changes of some indicators related to tissue browning and to analysing the effects of harvest date on Nanguo pear's tissue browning during storage. The results revealed that during period of growth the content of phenolic substance decreased and PPO activity increased in the early period and then decreased in the late period while activity of SOD and CAT increased consistently before harvest. So properly deferring harvest date would be beneficial for inhibiting the occurrence of Nanguo pear's tissue browning.
