| 摘 要： | 通过对腐烂葡萄和发酵野坝子蜂蜜的酵母菌进行自然选育、诱变育种和耐酒精发酵试验,选育出一株稳定的酵母菌A15,其最高酒精度达到10.4%(V/V)。

| Abstract: | This paper studied the yeast in rotten grape and barmy honey of Elsholtzia rugulosa by natural selection,UV mutation and ethanol tolerance fermentation, the mutant A15 yielded alcohol at a high level of 10.4%(V/V),and showed strong genetic stability during the generation. |
