壳聚糖涂膜处理对杨梅活性氧代谢的影响

摘    要:2℃±1℃下,杨梅采后6d内,SOD活性缓慢下降,APX和GR活性缓慢上升,活性氧产生速率趋于稳定状态,MDA含量也缓慢上升。6d后,SOD、APX和GR活性迅速下降,活性氧产生速率和MDA含量均迅速上升。1%壳聚糖处理杨梅能延缓SOD、APX和GR活性的下降,使之保持在较高水平,维持MDA在较低水平,同时抑制活性氧的产生速率。而0.5%壳聚糖处理对杨梅SOD、APX和GR活性及活性氧产生速率和MDA含量无明显影响。

Effect of Coating Chitosan on Active Oxygen Metabolism in Chinese Ar-butus Fruit (Myrica rubra Sieb. et Zucc.)
Abstract:The activity of Superoxide dismutase(SOD)was declined slowly,while the activities of Ascorbate peroxidase(APX),Glutathione reductase(GR)and Malon dialdehyde(MDA)content were increased slowly;and the active oxygen pro-ducing rate was stable when Chinese arbutus fruit were stored at(2±1)℃in6days.But the activities of SOD,APX and GR declined sharply,the active oxygen producing rate and MDA content were increased quickly in6days later.The Chinese ar-butus fruit coated with1%(v /v)chitosan delayed the activities of SOD,APX and GR and maintained them at high level.Not only MDA was hold in stable level,but also the pro ducing rate of active oxygen was inhibited.It had no significant effect on Chinese arbutus fruit when coated with0.5%(v /v)chitosan.
