摘    要:[目的]研究榆叶梅果仁蛋白质的提取条件,分析果仁总蛋白的组成成分。[方法]以东北榆叶梅果仁为原料,通过单因素试验方法研究料液比、pΗ、提取温度、提取时间对果仁蛋白提取率的影响,并应用正交试验法对最佳提取工艺条件进行了研究。利用薄膜电泳法,对果仁蛋白进行电泳分离。[结果]榆叶梅果仁蛋白质的最佳提取工艺条件为:料液比1∶45 g/ml,pΗ8.5,温度50℃,提取时间75min。电泳分离结果表明,榆叶梅果仁蛋白由清蛋白和球蛋白组成。[结论]榆叶梅果仁利用价值高,有开发利用前景。

Study on Extraction Technology of Protein from the Nuts of Northeast Flowering Plum

Abstract:[Objective] The aim was to study the extraction conditions of protein from the nuts of northeast flowering plum and analyze the composition of total protein in nuts.[Method] Taking nuts of northeast flowering plum as raw materials,the effects of solid-liquid ratio,pH,extraction temperature and extraction time on the extraction yield of nuts protein were determined by the single factor test.Moreover,using orthogonal test,the optimum extraction conditions were determined.The protein in flowering plum nuts was isolated by membrane electrophoresis.[Result] The optimum extraction conditions of nuts protein of northeast flowering plum were: solid-liquid ratio 1∶45 g/ml,pH 8.5,temperature 50 ℃,time 75 min.Electrophoretic separation results show that nuts protein is composed by albumin and globulin.[Conclusion] The utility value of nuts of flowering plum is higher,and has higher utilization prospects.
