养生益寿型枣醋的工艺研究

摘    要:目的]选取枣醋为主要原料,添加甘草汁、枸杞子提取物、玫瑰花提取物和蜂蜜,以开发一种养生益寿型复合枣醋饮料。方法]首先用单因素试验确定甘草汁、枸杞子提取物、玫瑰花提取物和蜂蜜的添加量,在此基础上以L9(34)正交试验法确定复合枣醋配方,最后用超滤膜处理。结果]养生益寿型复合枣醋的最佳配方为蜂蜜16.0%,玫瑰花提取物0.2%,甘草浸提液2.0%,枸杞子提取物0.2%,原枣醋为81.6%。结论]可以得到优良口感、较好色泽的健康枣醋产品。

Study on the Processing Technology of Healthy Jujube Vinegar

Abstract:Objective] To develop a kind of healthy compound jujube vinegar by mixing the jujube vinegar with bee-honey,liquorice juice and the extracts from Chinese wolfberry and rose petals.Method] The single factor experiment was adopted to determine the dose of liquorice juice,wolfberry extracts,rose petals extracts and bee honey,based on which the formula of compound jujube vinegar was determined with L9(34) orthogonal experiment,finally the products were treated with ultrafiltration membrane.Result] The best formula of healthy compound jujube vinegar was 16% of bee honey,0.2% of rose petal extracts,2.0% of liquorice extracts,0.2% of wolfberry extracts and 81.6% of jujube vinegar.Conclusion] The healthy vinegar products with excellent taste and good color were produced.
