平板膜超滤法加工胡柚汁的研究

摘    要:目的]研究超滤法加工胡柚果汁的可行性,为超滤法加工果汁的工业化提供参考。方法]采用3种不同截留分子量的超滤膜进行澄清胡柚果汁的研究,对膜透过液的透光率和色度进行比较。结果]截留分子量50 kD的超滤膜透光率可达91%,并且色度下降较小,基本能够保持胡柚汁原有色度。结论]采用平板膜超滤法处理胡柚汁是可行的。

Abstract:Objective] To study the practicability of the ultrafiltration processing of citrus juice,so as to provide references for the industrialized ultrafiltration processing of citrus juice.Method] The ultrafiltration membrane with three different molecular weight cut-off was used to clarify the citrus juice,and the transmittance and chroma of the membrane permeate were compared.Result] The transmittance of ultrafiltration with the molecular weight cut-off of 50 K could reach up to 91% and the chroma decreased slightly,the original color of citrus juice was maintained.Conclusion] The ultrafiltration processing of citrus juice was practicable.
