摘    要:介绍了HACCP体系的含义和内容,指出HACCP标准对我国食品监管理念的启示为应区分食品安全与食品质量的概念,科学对待指标与标准的关系;应区分农产品与加工食品,正确处理分段管理与分类管理的关系;应由事后处置转向事前防范,由结果检测转向过程控制。

Enlightenment of HACCP Standard to Food Supervision Concept

Abstract:The connotation and content of HACCP system were introduced,the enlightenment to food supervision were pointed out,including make a clear distinction between food safety and quality concept,agricultural products and processing foods,hold a scientific attitude toward relationship between index and standard,subsection management and classification management;post-accident disposal should be converted to beforehand prevention,result detection to course supervision.
