生姜叶鞘红色素的提取及稳定性研究

摘    要:研究了生姜叶鞘红色素的提取条件和稳定性,结果表明:用料液比11∶00、pH值为1的95%乙醇作提取剂,在70℃恒温浸提30min,提取效率较好。生姜叶鞘红色素属花青素类色素,水溶性好,对热(80℃以内)的耐受性强,光照能加快色素降解。pH值对色素影响明显。金属离子Na+、Ca2+、Zn2+对色素色泽无影响,而A13+、Cu2+、Fe3+、Pb2+有不良影响。色素的抗氧化能力较差而耐还原性能较好。蔗糖、葡葡糖和盐等添加剂对色素无影响。

Abstract:In this paper,the properties and extractions of the red pigment from ginger were studied.The results showed that the pigment could be obtained by 95 % C2H5OH solution at pH value=1 and 70 ℃ for 30min with the solid-liquid ratio 1∶100 g/ml.The red pigment was classified to anthocyanins and it was soluble in water,for which pH value had significant effect on the tone of pigment.The pigment had good heat resisting under 80 ℃.Under sunlight,degradation of the pigment could be accelerated.Metallic ions Na+,Ca2+ and Zn2+ had no effect on the tone of pigment,but Al3+,Cu2+,Fe3+ and Pb2+ had severe disadvantageous effect.This kind of pigment had better endurance capability against reducing agent,but it had less resistance capability against oxidizing agent.Addition of glucose and sucrose had no effect on the pigment.
