摘    要:甘油二酯(DG)是一种健康食用油。近年来,1,3-甘油二酯(1,3-DG)因其广泛用途日益受到人们的重视。甘油二酯是油脂的天然成分,同时也是一种多功能添加剂,在食品、医药、化工等行业有广阔的应用前景。评述了甘油二酯的制备、纯化方法和功能研究现状,对其应用情况作了介绍,展望了其开发前景。
