摘    要:食品添加剂是在食品的生产中,出于技术性目的而人为添加到食品中的任何物质,广泛应用于食品生产。食品添加剂的功能及其安全性已成为当前食品加工和食品安全领域研究与分析的热点。通过综述近期国内外相关文献,在介绍食品添加剂定义的基础上,重点论述了食品添加剂的功能及其安全性,同时也对食品添加剂的研究前景和方向进行了展望。

Abstract:Food additives are substances that may be found in food during or after it is processed.They were not used or placed in the food on purpose.The functions and its safety of food additives were becoming research hotspot in the field of food processing and food safety in recent years.On the basis of introducing the definition of food additives,the advantages,disadvantages and its safety were analyzed.Furthermore the development prospect of food additives was put forward.
