摘    要:对10头18月龄左右未经育肥的夏南横交牛(含外血50.0%的3头,37.5%的4头,25.0%的3头)进行了屠宰试验,试验结果:屠宰率60.13%,净肉率48.84%,胴体产肉率82.63%,眼肌面积117.7cm^2,熟肉率58.66%,肌肉剪切力值2.61,肉骨比4.81:1,优质肉切块率38.37%,高档牛肉率为14.35%。与未经育肥的南阳牛相比,屠宰率和净肉率分别提高了7.93%和5.24%。表明:夏南横交牛产肉性能优于南阳牛,可用于生产高档牛肉。

Abstract:Ten crossbred cattle of Nanyang cattle with Chairolais, three with 50 percent of Nanyang cattle blood, four with 37.5 percent of Nanyang cattle blood and two with 35 percent of Nanyang cattle blood were slaughtered and their beef performance were measured. The slaughtering results showed that average slaughter rate, net beef rate, beef percentage of carcass, rib eye area, ripen beef rate, shear force, bone and beef ratio, selected and choice beef rate were 60.13%, 48.84%, 82.63%, 117.7 cm2, 58.66%, 2.61, 4.81:1, 38.37%, 14.35%, respectively. Compared with Nanyang cattle without finishing period, the slaughter rate, net beef rate of the crossbred individual were increased by 7.93% and 5.24% than that of Nanyang cattle.
