超声波辅助酶促猪油甘油解制备甘油单酯的研究

摘    要:以猪油和丙三醇为原料,采用超声辅助酶促甘油解反应合成甘油单酯,通过单因素试验及正交试验,确定其最佳酶促合成条件。结果表明,最佳反应条件:叔戊醇为溶剂,Novozym 435用量10%(猪油质量分数),反应温度45℃,甘油与猪油物质的量的比4∶1,反应时间6 h,超声波频率28 kHz,超声功率250 W。在此条件下,甘油单酯产率达到(84.76±1.96)%。超声辅助酶促反应,不仅可以提高产物产率,还可缩短反应时间。

Study on Ultrasound -assisted Synthesis of Monoglyceride by Lipase -catalyzed Glycerolysis of Lard with Glycerol

Abstract:Monoglyceride was synthesized by lipase -catalyzed glycerolysis of lard with glycerol through ultrasound assistance. Single - factor experiment and orthogonal test were conducted to optimize the glycerolysis conditions of lard. The optimum conditions for monoglyceride synthesis were acquired as follows: tert - amyl alcohol as reaction medium, Novozym 435 lipase dosage 10% ( calculated on the basis of the mass of lard), reaction temperature 45 ~C, molar ratio of glycerol to lard 4: 1, reaction time 6 h, ul- trasonic frequency 28 kHz, and ultrasonic power 250 W. Under these optimum conditions, the productive rate of monoglyceride was up to 84.76% -+ 1.96%. The ultrasound - assisted lipase - catalyzed treatment could not only improve the yield of product, but also shorten the reaction time.
