复合酶解大豆蛋白工艺的研究

摘    要:以大豆蛋白为原料,采用复合蛋白酶Protamex与木瓜蛋白酶酶解,并通过单因素和正交试验分析。结果表明,Protamex酶与木瓜蛋白酶配比为6∶4,pH值为7.0,底物质量分数为5%,酶解时间为8 h,温度为60℃且水解度达到34.59%,为最佳酶解工艺。

Abstract:This research uses the soy protein as the raw material and get the small-molecule peptide by hydrolysing the soybean protein by Protamex and papain.Through the single factor and orthogonal tests,the results show that the proportion of enzymes(Protamex: papain) are 6∶4,pH 7.0,the substrate concentration is 5%,the hydrolysis time is 8 h.Temperature is 60 ℃,Under these conditions,the DH of soybean protein reaches 34.59%.It is the best technology condition.
