摘 要: | 对锥栗罐头制作中所产生的沉淀、褐变进行了研究。试验结果表明,通过栗仁表面果胶的钙化,可以抑制因栗仁表层淀粉的脱落而使汤汁沉淀的现象;通过杀菌温度和时间的控制,可以防止酶促褐变引起的栗仁变色现象。

Studies on the Castanea henryi Storage with Cans |

Abstract: | The experimental results show that the phenomenon of producing deposits in the soup and juice with the reason of the abscission of surface layer amylum of Castanea henryi kernel may be controled through the calcifying of pection on the surface of Chenryi kernel;the phenomenon of changing Chenryi colour caused by the brown stain promoted by enzyme may be prevented through the germicidal temperature and time control. |
