收获期降雨对强筋小麦品质的影响

摘    要:为了研究收获期降雨强筋小麦品质变化的影响,比较分析了降雨前与降雨后强筋小麦的品质,结果发现,收获期降雨对小麦品质有不利影响。降雨导致小麦籽粒容重降低,α-淀粉酶活性增大,面团流变学特性变劣,如面团形成时间和稳定时间缩短、公差指数增大、面团断裂时间显著缩短、粉质质量指数降低,面团拉伸曲线面积、拉伸阻力、最大拉伸阻力、拉伸比值、最大拉伸比值明显降低。

Abstract:To study the effects of raining during harvest season on quality of strong-gluten wheat,quality parameters from samples harvested before and after rain were measured and compared,the results showed that raining during harvest season had negative effects on the quality of mature wheat.Raining during harvest season resulted in decrease of test weight,increase of α-Amylase activity,worsening of rheological characteristics of dough,increase of water absorption and mixing tolerance index,and shortening of development time,stability time and broken time.Therefore the farinograph quality index was decreased.Effects of raining during harvest season on extensograph characters were that area under the curve,resistance to extension,maximum resistance to extension,ratio number,maximum ratio Number were obviously decreased.
