摘 要: | 以柚皮为原料,采用超声波辅助提取柚皮水溶性膳食纤维,通过单因素实验和正交试验优化提取条件。确定最佳工艺条件为pH3,料液比1∶16(g/mL),时间30m in,温度65℃,超声波功率280W。在此条件下,柚皮水溶性膳食纤维的提取率达76.97%,含量达79.45%。
