植物性天然色素的研究进展

摘    要:在人类食物的所有成分中,天然食用色素作为一类重要的、较为安全的食品添加剂,应用于食品已有几个世纪的历史.它们不但具有呈色作用,而且还有营养与保健功能,对人体健康起着重要的作用,因此开发利用天然色素在食品工业生产中具有重要的研究意义.现对几种植物性天然色素的特性功能及应用现状进行综述,以促进色素工业的发展.
