摘    要:以黄木耳为试材,研究了黄木耳在自然和环境胁迫下相关酶活性的变化规律.结果表明:邻苯二酚氧化酶、淀粉酶和羧甲基纤维素酶都与黄背木耳菌丝生长情况相一致,酶活力强时,菌丝生物量高.当黄背木耳在受到pH胁迫时,酸性条件会抑制邻苯二酚氧化酶、淀粉酶的产生;羧甲基纤维素酶的产生有很宽的酸碱适应范围,碱性条件能在一定程度上促进该酶的产生,温度对羧甲基纤维素酶的影响很小.

Abstract:Using Auricularia pannosa as test material,the pH value on the extracellular enzymes of Auricularia pannosa under nature and stress of pH were studied.The results showed that catechol oxidase,amylase and CMC enzyme were tightly related with the growth of Auricularia pannosa.When enzyme had high activity,the biomass of mycelium was high.And when Auricularia pannosa was under the stress of pH,the acid condition will suppress the production of catechol oxidase and amylase.The production of CMC enzyme had a wid...
