关于农产品冷冻干燥加工能耗影响因素的研究

摘    要:真空冷冻干燥技术因为其优良的脱水性能已被广泛应用于许多领域,在农产品(尤其是果蔬)加工中表现出极大的优势和发展潜力,但由于真空冷冻干燥过程时间长、能耗大,导致冻干产品成本高.冷冻干燥过程参数和物性参数是影响冻干能耗的主要因素,本文分析了冷冻干燥物性参数和过程参数之间的相互关系及两者对冻干能耗的影响,探讨了缩短冻干时间、降低冻干能耗的途径及强化冻干过程的措施.
