萝卜红色素的提取工艺研究

摘    要:为了达到优化萝卜红色素提取工艺的目的,以红心萝卜为原料,采用溶剂提取法,辅助超声波提取红心萝卜中的红色素。考察了料液比、浸泡温度、浸泡时间和提取剂的浓度对红色素得率的影响,萝卜红色素的最佳提取条件是:料液比为1∶1,乙酸的浓度为30%,温度为40℃,浸提时间为20 min。萝卜红色素最大提取量为7.295μg·g-1。结果表明,采用超声波辅助溶剂提取萝卜红色素的方法完全可行。

Abstract:In order to optimize the extraction process parameters of red radish pigment,red pigment was extracted from the red radish pulp by the method of ultrasonic wave extraction. The effects of factors,such as the rate of solid to solution,concentration of acetic,soak temperature and time was studied. The red radish pigment yield reached highest value of 7.295 μg·g-1 under extract conditions of 1∶1 rate of solid to solution,40 ℃,20 min and the concentration of 30%.The results showed the method of extracting red radish pigment was feasible by ultrasonic wave.
