香蕉薏米保健饮料的研制

摘    要:[目的]研制开发出以香蕉和薏米为主要原料的一种新型保健饮料。[方法]以香蕉和薏米为原料,通过正交试验,确定饮料的最佳配比组合;并对饮料的可溶性固形物、pH、还原糖、金属元素含量等指标进行测定。[结果]香蕉薏米饮料的最佳配比组合为薏米汁与香蕉汁的比例3∶1、柠檬酸0.2%、蔗糖13%;测得饮料的可溶性固形物含量11.0%;pH 3.13;还原糖含量79.2 mg/ml,金属元素含量分别为Ca:5.444 0 mg/L,K:4.711 0 mg/L,Mg:0.146 5 mg/L,Zn:0.019 2 mg/L,Cu:0.001 8 mg/L。[结论]试验制得的香蕉薏米饮料生产工艺简便,味道延绵香甜,且营养丰富。

Study on Health Beverage of Banana and Coix Seed

Abstract:[Objective] To produce a new type health beverage with banana and coix seed as main material.[Method] Using orthogonal test,the optimum ratio between banana and coix seed was obtained.Soluble solid,pH,reducing sugar,metals content were determined.[Result] The best formula was coix seed: banana 3∶ 1,citric acid 0.2%,sugar 13%.The soluble solid was 11.0%,pH 3.13,reducing sugar 79.2 mg/ml.The contents of metal elements of Ca,K,Mg,Zn,Cu were 5.444 0 mg/L,4.711 0 mg/L,0.146 5 mg/L,0.019 2 mg/L,0.001 8 mg/L,respectively.[Conclusion] The technique process of obtained banana-coix seed beverage is simple,the taste is fragrant and sweet with abundant nutrients.
