蓝莓中花色苷提取及其抗氧化活性研究

摘    要:采用不同浓度的乙醇溶液分别提取蓝莓鲜果液,测定各提取物中的总黄酮、花色苷含量,并通过二苯基苦基苯肼(DPPH)和β-胡萝卜素/亚油酸模型评估其抗氧化活性,以期获得一种新型、高效、安全的抗氧化剂来源.结果表明:60%乙醇溶液提取物中总黄酮和花色苷含量最高,分别为(3.94±0.19)mg/g、(1.26±0.11)mg/g;总黄酮和花色苷含量与DPPH自由基清除率的相关系数分别为0.848 1和0.785 2,与β-胡萝卜素/亚油酸体系中油脂氧化抑制率的相关系数分别为0.890 2和0.830 7,具有较强相关性;随着浓度的增大,蓝莓提取物的抗氧化活性明显提高,在400 μg/ml时,蓝莓提取物、BHT、Ase A的DPPH自由基清除率分别为93.42%、60.24%、90.16%,油脂氧化抑制率分别为82.80%、69.77%、14.85%. 苷含量最高,分别为(3.94±0.19)mr/s、(1.26±0.11)me/g;总黄酮和花色苷含量与DPPH自由基清除率的相关系数分别为0.848 1和0.785 2,与β-胡萝卜素/亚油酸体系中油脂氧化抑制率的相关系数分别为0.890 2和0.830 7,具有较强相 性;随着浓度的增大,蓝莓提取物的抗氧化活性明显提高,在400 μg/ml时,蓝莓提取物、BHT、Ase A的DPPH自由基清除率分别为93.42%、60.24%、90.16%,油脂氧化抑制率

Abstract:The blueberry liquid was extracted with the different concentrations of ethanol solution. In this study, to-tal flavonoid and anthocyanins contents were determined, and antioxidant activity was evaluated. The results showed that the highest contents of tlavonoid and anthocyanins existed in the 60% ethanol extract, which were (3. 94 ± 0. 19) mg/g and ( 1.26 ~0. 11 ) mg/g, respectively. The correlation coefficient from regression analysis showed high positive relation-ship between total flavonoid and anthocyanins contents in the extracts and DPPH scavenging activity (R~2 =0. 848 1 and 0.785 2, respectively), as well as between the two and linoleic acid inhibition activity (R~2 =0. 890 2 and 0. 830 7, re-spectively). The antioxidant activity of the blueberry extract increased significantly with the accretion of the concentration.At the concentration of 400 μg/ml, the blueberry extract, BHT and Asc A showed 93.42%, 60. 24% and 90. 16% inhibi-tion activity respectively in DPPH assay, and 82. 80%, 69.77% and 14. 85% in the β-carotene assay.
