干热改性葛根淀粉成膜工艺的研究

摘    要:目的]研究干热改性葛根淀粉的最优成膜工艺参数,为干热改性葛根淀粉膜的工业化应用提供理论依据。方法]以透光率、水蒸气透过系数、溶解度等为评价指标,通过研究改性淀粉用量、甘油浓度和干燥温度对干热改性葛根淀粉膜特性的影响,确定最优成膜工艺参数。结果]干热改性葛根淀粉膜的最优成膜工艺参数为改性葛根淀粉质量分数5.0%,甘油添加量1.5%,烘干温度80℃。结论]该研究可为葛根淀粉的深度开发利用提供参考。

Abstract:Objective] In order to provide a theoretical basis for modified kudzu starch edible film in industrial production,the optimal parameters of the film-forming process were studied.Method] The effect of modified kudzu starch concentration,glycerol addition and drying temperature on the characteristics of dry heating kudzu starch film were studied by measuring light transmittance,water vapor permeability and solubility.Result] The optimized processing parameters of modified kudzu starch film was modified starch concentration 5.0%,glycerol addition 1.5% and drying temperature 80 ℃.Conclusion] The study can provide reference for further development and utilization of kudzu starch.
