蔬菜中硝酸盐积累的机制和降低途径

摘    要:近年来,随着人民生活水平的提高,人们开始关注食品安全和健康,对蔬菜中硝酸盐含量也更加关注。人体摄入硝酸盐的主要来源是蔬菜,占总摄入量的81.2%。蔬菜中硝酸盐的积累与施用含硝态氮肥料与否没有直接关系,而与蔬菜种类及氮肥用量等相关。降低蔬菜中硝酸盐含量应通过控制氮肥用量、平衡施肥和加强田间管理来解决。
