An instrument measuring mechanical characteristics of the potato tuber

Abstract:Summary A type of penetrometer is described in which the probe passes through raw or cooked material at a constant speed, the force required to maintain this speed being continuously recorded to an accuracy of about 3% of scale. Examples of results obtained with unpeeled boiled potatoes are illustrated.
