摘    要:以绿茶及速溶绿茶为材料 ,采用硫酸_甲醇甲酯化 ,经GC_MS能够较好地分离和分析茶叶中的游离脂肪酸 ,三氟硼酸甲酯化不适合茶叶脂肪酸的分析。速溶绿茶中游离脂肪酸的含量十分少 ,只有绿茶原料的0 5 %。

Abstract:The free fatty acids in green tea could be well separated and analyzed by GC_MS, which were methylated by refluxing with anhydrous methanol in the presence of H 2SO 4, and the methylation of F3PO3 was not suitable to the analysis of tea free fatty acids. There were little free fatty acids in instant green tea, and it was only 0 5% of free fatty acids in green tea.
