摘    要:目的]研究冷冻干燥技术在水蜜桃加工中的应用,延长桃的供应周期,增加桃的经济效益。方法]以上海南汇水蜜桃为原料,采用冷冻干燥法,生产出2种水蜜桃的衍生产品,并采用药品常用质量分析方法对水蜜桃衍生产品进行质量控制。结果]用冷冻干燥法制备的水蜜桃冻干片和阿胶桃丁,各项营养成分指标满足食品要求,同时不含有重金属铅、铬和镉等,符合食品安全要求。结论]2种产品能够最大限度地保留水蜜桃的风味物质及营养成分,为解决桃子滞销及桃子冻干脱水工业化生产提供思路与技术支撑。

Abstract:Objective] The study was to explore vacuum freeze-drying technique and its application in juicy peach processing,and provides a certain technical support for slow sale of juicy peach and the industrialized production of dehydrated juicy peach.Method] Using Shanghai Nanhui peach as raw material,two derivative production of juicy peach were developed by vacuum freeze-drying technique,and the common analytical methods of drugs were applied for the quality control of them.Result] The nutrient index components of freeze dried peach slice and donkey-hide gelatin peach ding could meet the requirements of food,and they did not contain heavy metal (lead,chromium andcadmium etc.), in line with food safety requirement.Conclusion] The nutritional component and flavor of the two derivative production of juicy peach could be retained as possible as the fresh fruit,and extend the supply cycle and increase econmic benefits of juicy peach, provide a certain technical support for slow sale of juicy peach and the industrialized production of dehydrated juicy peach.
