连续梯度法萃取大豆浓缩蛋白的工艺研究

摘    要:介绍了连续梯度法萃取大豆浓缩蛋白的生产工艺。以脱脂豆粕为原料,以不同体积分数的乙醇水溶液为溶剂,采用连续梯度浸提法来萃取大豆浓缩蛋白,从而使蛋白质的含量提高到65%以上,且产品的气味得到明显的改善。

Abstract:It was introduced that extraction technics of soybean protein concentrate by continuous gradient method.Taking raw material of nonfat soybean meal and solvent of ethanol water with different volume fraction to extracted soybean protein concentrate by continuous gradient method, it was obtained that the product had protein content got ahead of 65% and smell improved.
