摘    要:对内蒙古呼和浩特地区牛乳中多种维生素含量进行测定与分析。主要测定了牛乳中VA、VB2、泛酸、VC以及VE 5种维生素的含量,其中,VA、VB2、泛酸以及VE的检出率均为100%,VC检出率为87.5%,同时研究了不同季节对牛乳中维生素含量的影响。结果表明,VB2和泛酸含量较稳定,受季节影响小;VA和VE含量均不同程度受到季节的影响;VC含量波动较大,受自身性质和季节变化双重影响。通过研究呼和浩特地区牛乳中多种维生素含量,对乳制品企业强化维生素指标具有重要的指导意义,也为今后的研究者提供了更准确的数据资料。

Abstract:In this study, a total of five kinds of vitamins including VA, VB2, pantothenic acid, VC and VE in the bovine milk samples collected at Hohhot City of Inner Mongolia were quantitatively determined and analyzed. The results showed that the detection rates of VA, VB2, pantothenic acid and VE were all 100%, and that of VC was 87.5%. Furthermore, the seasonal effect on the contents of vitamins in the bovine milk samples were investigated. It was demonstrated that the content of VB2 and pantothenic acid was relatively stable and was minorly affected by the seasons. The content of VA and VE varied seasonally, and the obvious fluctuation in the content of VC among different seasons was found, which might attribute to both of its own property and seasonal factors. This study has guiding significance for strengthening the requirements on vitamin content index of dairy products enterprises, and also provides more accurate data for the researchers in further studies.
