摘    要:浆果的营养物质和功能性成分丰富,但由于其水分含量较高,采后易腐败变质,极大地缩短了浆果的货架期,因此延长采后浆果的保鲜时间尤为重要。概述了多糖类涂膜、蛋白类涂膜、多糖-蛋白复合涂膜这3类天然可食性涂膜的优缺点以及在采后浆果保鲜中的应用,并对其保鲜效果进行了分析,以期为采后浆果保鲜技术的应用和发展提供技术借鉴。

Abstract:Berries are rich in nutrients and functional components, yet the high moisture content leads to easy decaying and shortening the shelf life dramatically. Therefore, it is particularly important to prolong the preservation time of postharvest berries. This article summarized the advantages and disadvantages of three kinds of natural edible coating materials, including polysaccharide film, protein film, and polysaccharide-protein composite film, with their applications in the preservation technology of postharvest berries, as well as analyses of the effects on preservation performances. This article provided technical references for application and development of preserva-tion technology of postharvest berries.
