壳聚糖涂膜对大枣鲜果常温保鲜效果的研究

摘    要:以"扁核酸"为实验材料,研究在常温下不同浓度壳聚糖(0.5g/100ml、1.0 g/100ml、1.5 g/100ml、2.0 g/100ml)涂膜处理对大枣鲜果采后生理及保鲜效果的影响。结果表明:在贮藏50d后,1.0g/100ml壳聚糖涂膜处理其好果率仍保持在93%,较对照显著提高;而总糖含量达到5.2%,较对照显著降低,可有效地保持枣果的硬度和Vc含量,抑制可溶性固形物和可滴定酸含量的下降,

Abstract:Using "Bianhesuan" as experimental, material the changes of postharvest physiology and sensory qualities at room temperature were investigated to evaluate the preservation effect of different concentrations chitosan (0.5g/100ml .1.0 g/100ml. 1.5 g/100ml, 2.0 g/100ml) coating on Jujube fruit. The result show that the Jujube fruit treated by 1.0g/100ml chitosan coating can maintain firmness and the contents of Vc,inhibit the decline in soluble solids content and titratable acidity,pereentage of good fruit was increased significantly,but total sugar wasdecreased significantly.
