摘    要:为研究筛选一株新粘质沙雷氏菌的次级代谢产物红色素,采用丙酮提取、分离、干燥等步骤,制备红色素样品,利用全波段扫描、红外光谱、液质联用等手段进行结构表征,并对该色素的稳定性进行系统研究.结果表明,该红色素属于脂溶物质,主要成分为灵菌红素,在酸性溶液中最大吸收峰在535 nm,该色素的色价大于250,对光不稳定,在温度低于100℃时,色素较稳定;部分金属离子(如Na+、Zn2+及Mg2+)、氧化剂H2O2、蔗糖、食盐、柠檬酸和低浓度苯甲酸钠(<0.05 mol·L-1)对该色素无明显影响;而金属离子Fe3+、Ca2+、还原剂Na2SO3等对色素溶液有明显的破坏作用.

Abstract:The red pigment,a kind of secondary metabolites,was produced by a new strain of Serratia marcescens jx1,which was screened in our laboratory.The red pigment was extracted and purified by using acetone.The obtained red pigment was identified as prodigiosin by UV/vis spectroscopy,IR and LC/MS.The effects of light,temperature,pH,metal ions,preservatives,antioxidants,reducing agents,as well as food composition on the stability of the red pigment were evaluated.The results showed that the red pigment belongs to ...
