摘    要:目的]对不同溶剂提取的黑木耳多糖的抗氧化作用进行研究。方法]以黑木耳为原料,提取出3种不同溶性的黑木耳多糖.通过黑木耳多糖对ABTS自由基、羟自由基的清除能力,以及对脂质过氧化的抑制能力,来评价3种不同溶剂提取的黑木耳多糖的抗氧化活性。结果]研究表明,3种溶剂提取的黑木耳多糖对自由基都有较好的清除作用。不同溶剂提取的黑木耳多糖具有不同程度的抗氧化能力,且水提黑木耳多糖的抗氧化能力优于其他2种。结论]研究可为人们寻求高效的抗氧化的功能性食品和药品提供一定的理论依据。

Study on the Antioxidant Activity of Different Solvent Extraction Polysaccharide from Auricularia auricala

Abstract: Objective ] The antioxidant activity of polysaccharide from Auricularia auricala extracted with different solvents was studied. Method] The antioxidant activity of polysaccharide from Auricularia auricala extracted with different solvents was evaluated through observing scavenging activity on ABTS free radical and hydroxyl, as well as inhibition activity on lipid peroxidation. Result] The three radicals men- tioned-above can be eliminated by the polysaccharide from Auricularia auricala. The polysaccharide from Auricularia auricala possessed the distinctive antioxidant activity and water-soluble Auricularia auricala polysaccharide antioxidant capacity is better than the other two. Conclusion] The study can provide a theoretical basis for obtaining high efficient antioxidant functional food and medicine.
