摘    要:以大豆为原料,研究双螺杆挤压机各参数对大豆膳食纤维可溶性的影响,并以水溶性膳食纤维的含量为指标,通过单因素及正交试验筛选出最佳工艺条件:物料粒度50目,物料含水量16%,膨化温度140℃,螺杆转速450 r/min。该条件下水溶性膳食纤维质量分数为21.35%。

Abstract:The effect of operational parameters on soluble dietary fiber of twin screw extruder is studied by experiments.In this experiment,the soluble dietary fiber content as the index,and the optimum condition is determined through single-factor and orthogonal tests.The results show that the optimum conditions are as follows:the granularity of material 50 mesh,the water content of material 16%,the extruding temperature is 50 ℃ and the rotating speed of screw is 450 r/min.Under these conditions,the soluble dietary fiber rate is 21.35%.
